Turmeric Chicken Rice

Apart from normal daily 2 dishes and 1 soup meal, I want to cook something different today. I have tried the Hainanese Chicken Rice before but not this Turmeric Chicken Rice - Wendy's signature dish which look so appetizing. I bought 3 packets of drumsticks which consist of 3 drumsticks in a packet yesterday and started my work at night. Marinate the chicken overnight before we can cook this delicious chicken rice. After some pounding, blending and mixing work~ tada...my chicken are lay in a big bowl, wrapped with cling wrap and refrigerated. On the next day we just have to take out the chicken and return it to room temperature before we pan fry it with the greased pan. Easy right?☻

Fresh turmeric are used to cook this chicken rice. I always love to use the fresh one to compare with the turmeric powder. Don't worry when turmeric stained our fingernails and fingers when we peeled and pound them, it can be wash out in a day or two. Always wear an apron when cooking this dishes


The peeled turmeric are pound finely before it's use to marinate the chicken.



Turmeric Chicken1


Ingredients:
5-6 chicken drumsticks
cooked rice for 5-6 people (preferably overnight rice)


For marinate the chicken:

60g fresh turmeric (pounded finely)
100g minced shallots
1/4 cup soy sauce
3 tsp dark soy sauce
2 tsp sugar
2 tsp sesame oil
1 tbsp oyster sauce
2/3 tsp white pepper

For the rice:

some sesame oil
soy sauce to taste
slash of white pepper

Marinate the chicken:

Wash and skinned the drumstick. Cut a deep line on both side.
Mixed all the marinate ingredients in a container.
Rub the chicken pieces until it evenly coated.
Refrigerate over night, turn once for evenly marinating.

Cooking Method:

Chicken should be in room temperature before we pan-fry it.
Heat up and grease a non stick pan with some oil.
In low-medium heat, cook the chicken. Adjust the heat accordingly to prevent the chicken got burnt. Cover with lid for better cooking.
Cook for about 10 mins per side for drumsticks (the time of cooking depend on the size of the drumstick) Flip and cook the other side too.
When all the chicken are done. Pour the left over marinating sauce into the pan, bring it to boil.
In low heat add in the cooked rice, stir and mix well. Add some sesame oil, soy sauce and some pepper to taste.
It should be done in about 2 mins time, don't overcooked the rice. Serve warm with the drumsticks.

Note: I straight fall in love with this dishes when I first try it. A simple and yummy dishes that is a must try !!!☻

Homemade Pizza

Pizza is one of my favourite food. I just love the melting cheese on top of it. Most of the time I will order the pizza with extra cheese, it won't go wrong with just any topping and I prefer the thick crispy crust to the thin one. But once a while I would love to have the thin one for a change. I would like to thanks Wendy for sharing with me on how to make the pizza crust, I was short of flour and I replace it with bread flour. It turn out great and my kids love it. I don't have to go to Pizza Hut to have my pizza anymore!☻

Pizza Dough: Makes enough for two 10" pizza

300 g bread flour/plain flour
2 1/2 tsp instant yeast
1 tbsp sugar
1 tsp salt
200 g warm milk (110f/43c)
80 g warm water (110f/43c)
3 tbsp olive oil/corn oil



Method:

Sieve flour and yeast in a bowl. Add in sugar, salt and set aside.
In another smaller bowl mix milk, water and olive oil. Pour it to the flour mixture slowly bit by bit and stir till it's well combined. The dough will be sticky at this time.
In a flat surface, dust your hand with some flour and slightly knead the dough for 2-3 minutes until it can forms a ball.
Place the dough in a greased bowl, cover it with cling film and let it rest for 20 minutes.
Remove the cling cover from the dough and punch the dough down so it deflates a bit.
Split the dough into 2 and roll it to the 10" round piece.
Let the dough rest for 5 mins and brush it with some olive oil before we top it with topping.


Pizza Topping: for one pizza

150g Mozzarella cheese, shredded
Mushrooms, thinly sliced
Bell peppers, stems and seeds remove, sliced
Sausages, cook ahead and sliced
Onions, thinly sliced
Pineapples, I use 3 pieces canned pineapple - cubes
Fresh tomatoes, sliced
3-4 crab sticks, cut into 1cm pieces
Tomato sauce


Sprinkles on top of Pizza:
Garlic salt
Parmesan cheese


Preparing the Pizza:

Preheat oven to 200c for at least 30 mins.
Brush the top of the dough with olive oil (to prevent it from getting soggy from the toppings).
Spoon on the tomato sauce , sprinkles with cheese and place your desired topping on pizza.
Note that you are not going to load up each pizza with a lot of toppings as the crust will end up not crisp that way but I overload my pizza seriously.... hahaha~
Cover it with more cheese on top, sprinkles some Parmesan cheese and some garlic salt on top. Bake in 200c for 15 minutes on greased pan.

I use my cookies pan to bake this and the shape of the pizza turn out like this ~


Note: *Greased the pan we use before we put the pizza on it. Pizza will sticks on the ungreased pan* - I'm now very full after having 2 pieces of it ~ burp!!

When I first see this "Dried Shrimp Egg Plant" in my friend Wendy's blog, it reminds me of my hubby who is now working in Hanoi. He loves this dishes a lot. I wondered why I can't cook this dishes the same way as we always have in the restaurant. The egg plant I cook always end up too soft and tasteless. I always add too much water to cook it and sometimes got it over-cooked. Too much water makes the egg plant tasteless. Egg plant tends to absorbs a lot of oil if we deep fry or pan frying to soften them. I would like to thank Wendy again for sharing with me the tips on how she cook the eggplant with less oil and it's more healthy.


Here is the recipe from Wendy.

Ingredients:
1 egg plant - medium size (slant cut into 1/2" slices)
1 tbsp cooking oil
1 1/2 tbsp dried shirmp - rinse with water
3 cloves garlic - chopped
3-4 chili padi/jalapeno (sliced)
1/2 tbsp fish sauce (鱼露)
1/2 tbsp oyster sauce
1/2 tbsp Lee Kum Kee hoisin sauce
1/2 tbsp light soy sauce or to taste
2-3 tbsp water
Some red chili and spring onion for garnishing
pinch of sugar (optional)

Method:

Heat up the non-stick pan without oil.
Place the sliced egg plant in the heated pan, cover with lid and cook for 2-3 minutes in low heat until its bottom part turn brown. Becareful not to burnt the egg plant.
Flip the egg plant slices, it should be slightly soften now and cook for another 2-3 minutes.
When both side of the egg plant turn brown, remove from the pan and set aside.

Note: Make sure the egg plant are soft before proceed to the next steps of the recipe.



*Now the egg plant are ready to stir fried with other ingredients*

Heat the pan with a tablespoon of cooking oil and brown the garlic in medium heat.
Add in dried shrimp and chili padi, stir and cook for 1 minute.
Add in fish sauce, hoisin sauce, oyster sauce and soy sauce. Immediately stir in the eggplant slices, cook for about 30-45 second.
Add in water, spring onion and red chili. Stir until water dries up. Serve warm with rice.


For those who love egg plant dishes, I truly recommend this recipe. A must try recipe to all of you. It's tasty and not oily at all. It smells so good that I can't control myself and straight away have one slice in my mouth. Yummy!!

Dragon Fruit Jelly

Today I bought some dragon fruits from the market. Dragon fruit is one of my favourite especially the red flesh one. It's juicy and sweet. Both my daughters they don't take fruits except my elder daughter she only take banana. They loves jelly, so I cook this dragon fruit jelly for them. Apart from having the jelly alone, at the same time they get to eat the fruit along. It's a good way to encourage them to take fruits and they grown to love dragon fruit a lot now. I blended it and they don't feel like eating fruits in the jelly. No colouring and flavour are added as it's a natural from the fruit - very healthy ya!!☻

This is how the dragon fruit look like. Does it look like dragon?? The dragon fruit is actually the fruit from a cactus plant and it has a bright red skin which can be peeled easily.
There is the white flesh variety and the other being the red flesh variety. It is best eaten chilled but do take care with your clothing because due to its juiciness, the red coloured juice will stained our clothes.

Here is the recipe for this jelly☻


Ingredients :
30g jelly strips (agar-agar)
200g sugar (can be easily reduce to 180g)
1 litre water
1 large dragon fruit - skinned & blended
3 pandan leaves - knotted





Method:

Wash & soak the jelly strips for 10 mins or more.
Bring water to boil. Add jelly strips, knotted pandan leaves and cook till it is fully dissolved.
Add in sugar and cook till it is completely dissolved, turn off heat.
Discharged pandan leaves.
Stir in blended dragon fruit puree into the jelly mixture.
Pour the mixture onto the jelly mould or 2 inch tray.
Allow to cool down before chill it in the fridge.

Note: *If you prefer to have bites of the dragon fruit in jelly. Don't blend the dragon fruit instead cut them in 1cm cubes and drop it in the cooked jelly. Reduce the sugar if the dragon fruit are sweet and vice versa. This jelly makes a good after dinner dessert☻

Simple & Easy Banana Bread

This super simple recipe, perfect for a busy housewife like me. I always seem to have bananas that have gotten too ripe to eat and what I do is to make them into cake or bread, use them up rather end up in the rubbish bin. This banana bread recipe are simple, we don't need yeast or to do all the kneading and even my daughters can make it after I prepare all the ingredients for them. We don't need a mixer to get the batter done. Preparation was quick and cleanup was super easy.

- Ripe bananas -

Here are the recipe for this super yummy banana bread. Try it and let me know what you think.

Ingredients:

3 or 4 ripe bananas - smashed
50 g melted butter
120 g sugar - (I use 100 g)
1 egg - slightly beaten
1 tsp vanilla essense
1/2 or 1 tsp cinnamon ground (optional)
1 tsp bicarbonate of soda
pinch of salt
200 g plain flour


Method:
Preheat oven to 160c (325f).
Sieve flour, cinnamon ground and soda together and set aside.
Mix melted butter with mashed bananas in mixing bowl with a wooden spoon.
Add in sugar, salt, egg and vanilla. Stir the mixture till well combined.
Lastly, add the sieve flour. Mix well.
Pour mixture into a greased 8"x4" loaf pan.
Bake for 50mins or until it's cooked. Cool on wire rack. Remove from pan and slice to serve.

*If the surface of the bread tend to brown too fast, cover the pan with aluminium foil after 30mins of baking time before it's burnt

Simply easy to bake this right???

Note: For those who loves nuts can add in some coarsely chopped walnuts in the mixture. If you add chocolate chips in it, reduce the amount of sugar in the recipe. *The sweetness of the bread are depend on the sweetness of the banana used - use less sugar if the banana are very sweet. I sprinkles some cinnamon & sugar mixture on top of the bread before I baked it. I just love how it crisp and cracked on top of the bread. It is moist and yummy!☻

Walnut and Chocolate Chips Cookies

My kids have been fan of Famous Amos' cookies all this while. They have the cookies since they are small. Too bad we can't get to buy this cookies here and only manage to buy it when we make a trip to KL. I've been browsing for the chocolate chips cookies recipe online until I read Kikey's blog talking about the chocolate chips cookies she baked and eventually link me to this wonderful recipe from FoongMood. I would like to thank her for being so generous sharing the recipe with me and let my kids at home can have a taste of Famous Amos' cookies. My kids loved the cookies so so much..
Walnut and Chocolate Chip Cookies3
I didn't chopped the walnut too small. I love to chew the walnuts in my cookies.

Ingredients :

Butter 150 g
Sugar 110 g (I use 100 g)
Brown Sugar 30 g
Egg - 1
Flour 220 g
Corn Flour 50 g
Vanilla Essense 1 tsp
Baking Soda 1 tsp
Salt 1/2 tsp
Walnut 100 g
Chocolate Chip 50 g
Coco Powder 30 g


Method :

Sieve flour, corn flour, coco powder & soda together. Set aside.
Cream butter with sugar and brown sugar until it is creamy.
Add in egg and mix till well combined.
Add in salt and essence vanilla.
Fold in the sieve flour till it forms dough and mix in the chopped walnuts and chocolate chips.
Spoon and drop the dough onto the lined baking pan.
Baked at preheat oven at 180c for15-20 mins.

My cookies fresh out from oven. Don't forget to let it cool first before you move them to cool further on the wire rack. Look good right?? It taste heavenly, trust me!!

Note: Make sure you use the good quality butter, walnut and chocolate chips when baking this cookies. I use chopped Hershey unsweetened chocolate bar to replace the chocolate chips in this recipe.

Soft Jelly In Longan Syrup

My elder daughter have been asking me to cook this jelly for her several time. This is her favourite dessert. It's very easy to cook and we can make this jelly for children's birthday party. The jelly itself are not too sweet, it taste just nice when eaten with the canned longan flesh and it's syrup.

Let me share this simple and nice jelly recipe with all of you☻

Ingredients:
25 g/1 packet of thai jelly powder
4 liter water
500 g sugar
400 g/ 1 can of evaporated milk
2 can of king longan
30 plastic cup with cover

Method:
Cook the jelly powder in the water until it is fully dissolved.
Add sugar and bring the jelly mixture to boil.
Add evaporated milk and stir the mixture well. Don't over boil it.
Switch of the stove and set aside.
Let it cool before fill in the plastic cup with cover.
Fill the jelly mixture about 80% full, leave some space for the longan flesh.
Let the jelly set before add 2 longan flesh and 3 tsp of longan syrup on it.
Refrigerated it before serving.

Jelly in the plastic cup before the longan is added.


Note: The recipes above makes 28-30 cup of jelly. We can store them in the fridge and eat them at anytime we like. Great for party, when we have many guest☻
