Egg Tarts

Egg Tart

All my kids are a big fan of Egg Tarts, they just love it so much. Each of them can finished up to 3 tarts at one time and sometimes asking for more. One egg tart are selling at 80cents at the market, not to mentioned the one sold in the bakery and see how much I have to spent for just the egg tarts for them. Egg tarts are the must-learn recipe for me and when I came across this easy yet simple egg tart recipe at Let's Get Wokking!, I bookmarked it immediately☻ After getting all the ingredients and the egg tart's mould. I start working on the pastry in the morning and sit them on the fridge first before I sent the kids to the tuition classes.

The egg tarts turn out great apart from it's a bit too brown to compare with the one made by WokkingMum. I think I shall reduce the temperature to 160c next time. It taste extremely yummy, crunchy pastry with the jelly soft egg custard fillings...yumm!!! It taste heavenly when you took a bite on it when it's still warm. Taste wise, not too sweet to my liking. I add a tablespoon of custard powder in the egg mixture for the tart's filling and the tarts looked amazingly golden yellow in colour. I will definitely make this again very soon ☻

Let me share the recipe here:

What you need!

Ingredients For Crust

  • 340 g Cake Flour/Plain Flour
  • 230 g Butter, softened
  • 70 g Caster Sugar
  • 1/2 Egg, beaten

Ingredients For Custard Fillings

  • 3 Eggs
  • 80 g Caster Sugar
  • 70 ml Milk
  • 230 ml Water
  • 1 tbsp Custard Powder

What to do!

  1. Cream butter and sugar with mixer.
  2. Add egg and mix till it's well combined.
  3. Add flour and mix into dough.
  4. Put the dough in a bowl, cover it with cling wrap and keep in the fridge for 30mins.
  5. While the dough are refrigerated, whisk the eggs, sugar and custard powder for custard fillings until thick and creamy.
  6. Add milk to the mixture and continue to whisk until well-combined.
  7. Add water gradually and continue to whisk together. Set aside.
  8. Now the crust shall be ready. Weight dough into 30g each (depend to the size of mould used).
  9. Roll it into ball, flattened it with our palm and press it into egg tart's mould. It's about 1/2cm thick.
  10. Spoon the custard fillings. Becareful not to drop the filling mixture at the side of the crust as it will turn brown when we bake it later.
  11. Bake the tarts in preheat oven at 180c for 25 mins, till the crust slightly brown and the egg custard is set.
  12. Wait till it's cool before turning the mould upside down to remove them.

Notes: I add one tablespoon of custard powder in the filling's mixture to get the more yellow colour of tarts. Don't worry if the filling are still soft when you finished baking the tarts, it'll set when the tarts are slight cool down. Make sure the tarts are cool already when you remove them from the mould. The tarts that's still hot breaks easily.

Makes approximately 18-20 tarts. I got 19 tarts using the 5cm size mould ☻

Onion Bacon Quiche

Onion Bacon Quiche

I first got to know this "Quiche" from my friend Wendy's Blog and I never tried this before. Quiche (pronounce as "keesh") is an open savoury tart with the fillings made from eggs, milk, cheese, meat (bacon) or vegetables (spinach, tomatoes)..etc, just add in any ingredients of your liking.

I made this Quiche for our dinner yesterday. It is a French cuisine that usually served for breakfast, lunch or as snack for teatime or picnic.


Ingredients:

Tart Crust:
1 ready made 8" pie/tart crust (deep dish shell)
or
180g all purpose flour
1/2 tsp salt
80g cold butter, cut to pieces
40g margarine, cut into pieces
3~4 tbsp iced water

Fillings:

5 slices bacon
1/2 cup chopped onion
1/4 chopped green onion
2tsp olive oil
2 egg
2 egg whites
1/2 cup evaporated milk
1/2 cup low fat milk
1 1/2 tsp cornstarch
1/4 tsp ground black pepper
some salt to taste
1/4 tsp ground nutmeg
3/4 cup grated cheese (your preferred cheese)

Method:
Prepare the Crust/Tart:

1. Sieve the flour and salt into a mixing bowl.
2. Rub in the butter and margarine until the mixture resembles coarse breadcrumbs.
3. Stir in just enough water to combiItalicne (if the dough are already wet enough, then omit the water)
4. Shape it into a ball, wrap in cling wrap and refrigerate for about 20mins.
5. After 20mins emoved the chilled dough from fridge, let it soften slightly at room temperature.
6. Roll the dough into a 3mm thick piece, it has to be 50mm larger round than tart pan.
7. Transfer to a 8" tart pan and trim.
8. Prick the face all over with the fork.
9. You may decorate the edge with the fork or fingers (up to your creativity)
10. Cover crust with aluminum foil and freeze for 1 hour before use.

Fillings for Quiche:

1. Preheat the oven at 425F/218C (the temperature are depend to the oven brand we use, i bake at 200C)
2. Fried the bacon slices until crspy in the non-stick pan without oil - crumble and set aside.
3. Saute the onion with olive oil until fragrant, stir in the crumbled bacon and green onion. Remove from heat and set aside.
4. Whisk together the eggs and egg whites together. Then add in evaporated milk, low fat milk, cornstarch, black pepper, salt, nutmeg. Whisk till well combine.
5. Mix grated cheese into cooled onion bacon mixture, then spoon the mixture into the crust.
6. Slowly pour the egg mixture in even layers.
7. Bake on the lower rack in preheated oven for 30~40 minutes or until the filling is set (it took me only 30mins to bake it)
8. Served warm.

Notes:

Make sure all the cheese are cover by the milk mixture to avoid the brownish/burnt top when baking. Mix the grated cheese with bacon onion before pour the milk mixture on top of it and not sprinkle the grated cheese after we pour in the milk mixture.
